Sunday Supper

Every Sunday I will be posting about one of my trips and one of the restaurants where I got the best food for the best deal. I will try to recreate the meal and give the recipe, serving cost and a little photo action to help you along.   For my first Sunday Supper I bring to you one of the best BBQ sandwiches I have ever eaten. 

As soon as the weather broke last spring Chris, (my boyfriend and trusty travel companion) and I set out on the road to Colonial Williamsburg, Virginia.  We were in search of a weekend full of museums and history, which did not disappoint, but we were pleasantly surprised when we found the hidden gem Pierces Pit.  This place not only had superb down home southern cooking, but the price point was right on budget with our cheap weekend getaway. The Sandwich did not disappoint and the whole meal with leftovers including drinks (sweet tea and lemonade) came to $12.25


My version of the BBQ Chicken Sandwich.  Servings:6.  Price per serving $1.69

The Sauce
-1- 1/4 cup of your favorite BBQ Sauce
-2- 2 Dashes of Louisiana hot sauce (Depending on how hot you like your food)
-3- 1/4 of an onion diced small
-4- Salt and Pepper
-5- 2 Dashes of Worcestershire
-6- 1 ounce of Apple Cider Vinegar
-7- 1 ounce of water
-8- 1 glove of minced garlic
-9- 1 teaspoon red pepper flakes

Protein
-1-1/2 pounds of all white meat chicken cut into 4 large pieces
 ^^ you can substitute dark meat like chicken thighs for an even less expensive serving price


Now the simple part- throw all the ingredients in the crock pot and cook on low for 4-5 hours or until the chicken is cooked and ready to pull.   Pull apart the chicken with two forks and then set the crock pot on its lowest setting (keep warm) for a minimum of 2 hours and until your ready to enjoy

**Note: Its going to look like you have a lot of extra sauce, but while its cooling down the sauce will thicken and the chicken will absorb all of the juicy goodness of the sauce. **



Grab a nice large bun, with or without seeds, pile the chicken high, and enjoy.
